Immediately after being destemmed, the still intact berries find their home in steel vats, where through careful punching down and pumping over, they contribute to giving the characteristic color to the fermenting mass. Fermentation proceeds precisely at a controlled temperature.
Visually, the wine is clear, with a ruby red hue that attracts the eye. The olfactory bouquet is a true harmony of red flowers, roses and violets, accompanied by notes of red berry fruit, with cherry and plum emerging in a distinctive way.
On the palate, the wine reveals its complexity. It is dry, exudes an enveloping heat, at the same time soft and fresh, with a well-balanced tannicity that gives structure and depth.
This wine pairs beautifully with grilled meats, mature cheeses and typical local cured meats.
