Unlike other productions, the contact with its yeasts, during fermentation and in the refinement phase, gives it richness and personality, without altering its balance and elegance.
Soft pressing followed by sudden cooling and then decantation. Subsequent alcoholic fermentation occurs by separating the mixture into two parts, one of which is vinified using a film maceration technique, favoring the extraction of the varietal character while the other part is vinified in steel tanks, and malolactic fermentation. Fermentation in steel lasts approximately 18 days, while malolactic fermentation lasts approximately 5 months. It then ages in the bottle for a few months before being served.
