This sparkling wine is made entirely from Chardonnay grapes, handpicked in the finest vineyards of the area, where early harvesting ensures a perfect balance between acidity and freshness.
The winemaking follows the traditional method, with a primary fermentation in stainless steel tanks, followed by a second fermentation in the bottle according to the Classic Method. "Sottozero" matures on its lees for over 36 months, a process that imparts complexity and refined aromatic characteristics.
From an organoleptic perspective, the Franciacorta Brut Nature DOCG "Sottozero" is distinguished by its straw-yellow color with brilliant reflections. On the nose, it offers a complex and elegant bouquet, with notes of citrus, white-fleshed fruits, and hints of toasted bread and white flowers, attributed to the long maturation on the lees.
