In Castello di Serravalle, in the province of Bologna, from vineyards grown between 200 and 300 m a.s.l. on land with a composition of mixed clays, sand and limestone, with a temperate Mediterranean climate, the Grechetto vineyards used to produce "Il Rivoletto" are grown.
The vinification is carried out in steel, with the second fermentation in the bottle at the end of spring in the year following the harvest. After disgorgement, it is placed on the market about 6 months after bottling. Refines for a period of 6 months in the bottle on the lees.
An Emilian company that produces excellent wines with a lot of personality, organic, with minimal sulfur and rich in character. An evolution of perfumes, with biting notes of mountain herbs, such as artemisia and absinthe, and the fruitiness of perfectly ripe fruit as a background, opening up to a full taste, with a soft finish. Golden yellow color tending towards greenish to the eye.
An extremely versatile wine that goes perfectly with any type of dish.
