La vendemmia del Pinot Noir prodotto da Kistler Vineyardrs viene effettuata nel cuore della notte, al buio e, specialmente, con temperature fresche. Il risultato sono uve più fresche che conservano meglio la loro acidità. Può sembrare molto strano se non si sa molto di vino, ma un vero intenditore è al corrente che l'uva è in uno stato fisiologico diverso nella frescura delle tre del mattino rispetto a metà giornata.
Il Pinot Noir viene fatto fermentare spontaneamente in vasche aperte e il mosto fiore viene invecchiato in botti di rovere francese per un massimo di 18 mesi.
Nel calice sfoggia un bellissimo colore rosso rubino; i profumi che salgono al naso sono intensi, caratterizzati da sentori floreali e fruttati di frutti rossi, con cenni affumicati. Il gusto è ricco, di medio corpo e piuttosto secco, l’acidità che si percepisce risulta medio-alta, con tannini e intensità medi, i riscontri fruttati di prugna e ribes aprono ad un finale speziato di pepe nero.
Un vino che si abbina perfettamente a piatti saporiti come la polenta con i funghi porcini, cacciagione arrosto o salmone brasato alla marocchina.
