The Trebbiano, Grechetto and other local white grape varieties used to make Cadetto Bianco are grown on medium-textured, clayey-sandy, deep soils. The training system applied is the double guyot one. The harvest takes place in September, the grapes arriving at the cellar undergo a soft pressing, the only free-run must obtained is vinified in steel at a controlled temperature of 14°C. The low temperatures are kept constant in all stages of processing and storage.
It has a medium intense straw yellow colour. On the nose it seduces with its floral bouquet of star aniseed yellow flowers to which nuances of unripe almond are added. The sip is fresh and round, with a delicately bitter finish.
It is recommended to combine it with rich salads, fried or marinated sea and lake fish dishes, grilled white meat and appetizing fried appetizers.
