Made using traditional distillation methods, Mezcal Castilla Joven is crafted from carefully selected Espadín agave. The agave plants used grow in the Oaxaca region, where the rich soil and specific climate endow the mezcal with unique and unmistakable characteristics.
In the production process, the agave plants are slowly cooked in underground conical stone ovens, using wood and charcoal to achieve a smoky taste that is characteristic of many high-quality mezcals. Subsequently, the agave is ground and naturally fermented with wild yeasts, and finally distilled in copper stills, a practice that adds further nuances to the aromatic profile.
