The "Estivo" Extra Virgin Olive Oil is produced in the Avanzi oil mill in Manerba del Garda.
An Extra Virgin oil so named on the label, a term used by "Lucio Giunio Moderato Columella" a great agronomist who in the year 54 AD. in one of his treatises he defined "Estivo" as the oil obtained from olives harvested early at the end of October.
This type of crop choice has a low quantity yield but the taste is unique. After harvesting, the olives are pressed within 24 hours, this allows us to obtain an extremely fruity, slightly spicy oil with an almond aftertaste.
The olives harvested slightly early have a very low acidity, which makes the oil very suitable for the Mediterranean diet. It is excellent for seasoning salads and seasonal vegetables, and is perfect on bruschetta or for raw seasoning soups and fish.
