The Prosecco Extra Dry Valdobbiadene Superiore DOCG produced by the renowned winery Col Vetoraz is an excellent example of how tradition and quality can blend in a glass of wine. This sparkling wine stands out for its light straw yellow color, with a lively and persistent effervescence that culminates in a creamy and enveloping mousse.

The aromatic bouquet of this Prosecco opens with fruity notes of green apple, pear, and citrus, enriched by floral nuances of wisteria and acacia, a distinctive touch of the hilly terrain of Valdobbiadene. On the palate, the wine presents a refined balance between acidity and sweetness, typical of the Extra Dry style, making it both fresh and pleasantly soft.

The winemaking follows rigorous quality standards, with temperature-controlled fermentation followed by a second fermentation in an autoclave using the Martinotti method, which preserves the primary aromas and ensures a finesse of the perlage that only the best Proseccos can offer.

This elegant Extra Dry version pairs beautifully with light appetizers, fish-based dishes, or as an aperitif. Moreover, its complexity also makes it suitable for pairing with Asian cuisine dishes, offering a refreshing counterpoint to the spices.

Tasting it, one can perceive Col Vetoraz's dedication to achieving a wine that not only represents the territory of Valdobbiadene but also elevates Prosecco to new levels of excellence, always maintaining a deep connection with its origins.
