The Soave DOC Classico "Calvarino" from Pieropan winery is an excellent selection for those wanting to discover the quintessence of the Veneto region in the production of white wines. This wine is primarily made from Garganega grapes with a small percentage of Trebbiano di Soave, grown on the volcanic and limestone slopes of Mount Calvarino. The unique composition of the soil gives the wine a distinctive minerality and remarkable freshness.
"Calvarino" appears a bright straw yellow with greenish tints. The nose opens with intense aromas of white flowers, citrus notes, and hints of peach and apricot. On the palate, the liveliness of the acidity is balanced by a rich structure, resulting in a complex and harmonious palate. The finish is long and persistent, with a return of the mineral and fruity notes.
The fermentation of the Soave DOC Classico "Calvarino" takes place in stainless steel tanks to preserve the utmost freshness and integrity of the primary grape aromas. After fermentation, the wine remains in contact with its fine lees in steel tanks for about a year, adding complexity and texture to the palate.
Ideal as an aperitif, "Calvarino" pairs beautifully with light starters, fish, seafood, and dishes based on rice or pasta with vegetables. It is also an excellent match for flavorful and Asian cuisine.
