Grignolino d’Asti was born in the hamlet of Annunziata, Castagnole Lanze, from 100% Grignolino berries.
The grapes are harvested manually towards the end of September, then transported to the cellar, they are immediately pressed and fermented at a controlled temperature of about 18 ° C, with a maceration of about 2/3 days and frequent pumping over. At the right moment, the grignolino is drawn off and the fermentation is continued "in white", that is without the skins and pips. The next step is to let the wine clear by static decanting until the end of winter. It will then be left to rest in steel tanks until spring, to then be bottled; it will have to spend another month in the bottle to refine before being introduced on the market.
In the glass it shows off a beautiful intense ruby red color with bright purple reflections that tend to orange over time. The bouquet is floral and fruity, with notes of geranium, carnation and rose, decisive hints of wild strawberries clearer when young, combined with decisive hints of white pepper that stand out more and more with the passage of time. In the mouth the taste is fresh with a tannin present but not too much, and a delicately bitter aftertaste.
It can be enjoyed as an aperitif or combined with summer appetizers and pasta dishes. It will surprise you with its fried fish.
