The denomination of the Cartizze wines comes from a single hill in the Municipality of Valdobbiadene, an exclusive location, capable of giving the Prosecco a great minerality and verticality. Fine sparkling wines, with elegant and well-defined scents.
After harvesting, the grapes are crushed and softly pressed with pneumatic presses and a static decantation of the must. Fermentation takes place at a controlled temperature (17-19°C) with selected yeasts. Subsequently, the wine remains in steel autoclaves for prise de mousse with the Martinotti method. The sparkling cycle lasts about 30 days.
In the glass it shows a straw yellow color, with a fine perlage. The bouquet expresses fruity hints of rennet apple and other ripe fruit, caressed by aromas of acacia honey. The taste is perceived elegant and fruity, followed by a slightly sapid hint and the delicious sugary imprint that distinguishes it. Sweet and enveloping finish.
Sior Toni is perfectly suited to any meal, from aperitifs to more particular fish-based preparations, up to desserts.
