Grapes of the Cuvèe del Fondatore from the banks of Col San Martino produce this prosecco to which the founder wanted to give his name.
Produced through skin maceration, with gentle squeezing, then the must obtained is placed directly in an autoclave for the prise de mousse for about 60 days. Finally after two months it passes to the last phase in which it is stationed on its lees for another 120 days or so.
This prosecco is therefore the pinnacle of the complexity and longevity of the Merotto house's production.
With a classic straw yellow color and greenish reflections. Very fine foam satisfying on the palate and with a delicate perlage.
It offers immediate floral scents on the nose and on the palate between white fruit and citrus.
On the palate it is very long and persistent, re-proposing the first tasted notes but with more delicacy.
