The motto of the San Valentino company mentions: "good wine is born in the vineyard and is completed in the cellar", and it is precisely on the basis of this that all interventions on the plants are made for a single purpose: to create optimal conditions for healthy grapes and of excellent quality. Sangiovese Superiore Scabi Rosso, is a wine whose grapes come from organic farming and whose fermentation is natural in steel with indigenous yeasts, and thefining takes place in steel on the lees for 8/10 months with periodic batonage.

A drink that in the glass is ruby red with purplish hues. The nose is dominated by hints of plum, raspberry and currant, as well as scented hints of red roseA rich red, which when tasted shows a good structure, with well-integrated tannin and a surprising finish with hints of red fruit jam on the palate.

A versatile wine of excellent quality that lends itself very well to being present at the table every day in combination with first courses with meat sauces and not too seasoned, red meat courses and cheeses not too seasoned.

Winery history
The winery is a family-run operation tied to the Mascarin family; the business developed from the 1990s and in recent years management has also involved the Aureli family. Since the late 2000s the estate has adopted natural/organic vineyard practices and has progressively reorganized production, focusing on a few selected varieties and distinctive product ranges.
Production philosophy
Production focused on respect for the land and the vine, employing organic practices in the vineyard and aiming to produce wines that reflect the character of the grapes and the local microclimate. The winery clearly prioritizes vineyard quality as the starting point for its wines.
Terroir and vineyards
Situated on the hills of Covignano, a few kilometres from the Adriatic coast and close to Santarcangelo/San Martino in Venti. The climate is moderated by the sea breeze, which contributes to the balance of the grapes grown on the hills.
