The harvest takes place in the first ten days of September. After the harvest, and later delicate pressing, the free-run juice is left in contact with the natural lees at a low temperature for 10 days, then decanted and fermented at a temperature of 18° C. Once the alcoholic fermentation is complete, it is aged on the fine lees for a couple of months . The wine is then racked off to be bottled. The conservation in the bottle for about 2 months gives completeness to the refinement.
An elegant wine that stands out in the glass for its light coral pink color. The sense of smell is overwhelmed and conquered by the aromas of exotic fruit that gently intersect with citrus nuances. On the palate it is sapid, refined and incredibly fresh. From the first sip it expresses an extraordinary drinkability and in the finish it evokes very pleasant references to grapefruit on the palate.
Excellent as an aperitif and fabulous, thanks to the refreshing acidity, in combination with fish appetizers, sushi and shellfish.
