It comes from the distillation of a large trio of white pomace of Tocai, Prosecco and Gargànega grapes, deriving from the Berici Hills and the Valdobbiadene area (Veneto).
It is obtained through an artisanal distillation, by means of a plant that has always been used with a direct steam discontinuous cycle, one of the few still in operation, at low pressure and low temperature. The 4 small boilers of which it is composed are rigorously made of copper, as per tradition. The very slow distillation cycle processes small batches of pomace (cooked) at a time, for a duration of about an hour and a half.
Once distilled, the grappa remains in steel containers for about 6 months, in this period the product rounds off the edges and takes on more delicate and soft olfactory sensations.
Limpid and crystalline, Grappa Bianca Quaranta is extremely harmonious and delicate, with a sincere taste and clean aromas. Light floral aromas of acacia and linden flowers arrive on the nose.
Perfect in combination with not particularly tasty soft cheese, to try with apricot jam. Excellent end of meal.
