Susumaniello represents the expression of Salento produced in purity from the vine of the same name whose vineyards are grown on the Castel Serranova estate, near Carovigno, in the province of Brindisi. The south-facing soil has a clayey-sandy composition, and the vines are trained with the bilateral spurred cordon system. The harvest is done manually and mechanically towards the second ten days of September. The vinification begins with a soft destemming-crushing, followed by alcoholic fermentation and maceration at a controlled temperature in stainless steel tanks for a period of 15 days and then a spontaneous malolactic fermentation. The refinement takes place in cement tanks and continues in the bottle for 3 months before being put on the market.
At sight it shows a very intense, brilliant ruby red color with violet reflections. The olfactory profile is inebriated by fruity and spicy scents, with fine vegetal notes. In the mouth the taste is very structured, powerful and savory, with a soft beginning and articulated succession, soft and enveloping tannins characterize the long and spicy finish.
Excellent in combination with structured first courses, perfect with meat in general and spicy foods.
