The harvest starts from mid-September and early October when the grapes are fully ripe.
The pressing and natural clarification of the must follows. Fermentation takes place in steel at 18 ° C. Before bottling, which usually takes place in May, maturation takes place for 6 months on the fine lees.
This Pinot Bianco has a bright straw yellow color, but with green reflections.
On the nose they exalt fresh notes and rich in aromas, reminiscent of green apple, pear, citrus, with the addition of a veil of mint.
In the mouth, its structure is immediately very good and refined, with a fresh acidity, a lot of minerality and mellowness on the finish.
At the table it goes very well with aperitifs, fish dishes and sushi, but it is also an excellent combination with South Tyrolean dishes.
