The Verdicchio vineyards are located in Salmagina in the municipality of Staffolo, on medium-textured cultivation land with areas rich in clay alternating with areas heavier in sand and tuff, facing south-west, at an altitude of 450 m a.s.l. The manual harvest is carried out over several periods, with soft pressing of the whole grapes and fermentation at a controlled temperature for a period of time.
The Castle has a beautiful straw yellow color with greenish reflections. Conquers the sense of smell with a delicate and elegant scent punctuated by aromas of yeast and freshly baked bread to which are added floral hints of hawthorn and broom. The sip is dry and fresh, pleasantly bitter and salty, with a perfectly balanced acidity.
The combination is excellent with clams, grilled fish and soups, and also with white meats.
