Cesari's Amarone della Valpolicella Classico is produced with Corvina Veronese, Rossignola and Rondinella grapes, coming from vineyards grown in the municipalities of Negrar, Sant'Ambrogio, Marano di Valpolicella, San Pietro in Cariano and Fumane, in the historic area of Valpolicella.
The harvest is done manually, the bunches are then left to dry in the loft to obtain the maximum sugar concentration. The fermentation with maceration in contact with the skins continues for a period of 20-30 days, in stainless steel tanks at a controlled temperature. Following the malolactic fermentation, the wine ages for 36 months, most of which for 12 in Slavonian oak barrels and a small part in French oak barriques and tonneaux.
In the glass it shows an intense red color. The nose releases a complex aroma, with fruity aromas of cherry and plum jam, as well as vanilla and toasted hints. The taste is pleasantly harmonious and full, perfectly balanced, persistent and warm.
Excellent with game and grilled and stewed meat, this Amarone is the ideal glass to sip as a meditation wine.
