Asamai Shuzo was founded in 1917 in the Hirakamachi Asamai area of the Yokote basin, Akita Prefecture. Throughout its history the operation has remained artisanal in scale; public records show that since 2011 the company has focused production exclusively on Junmai (sake made only from rice and water).
Production philosophy
Production is based on the use of local ingredients: locally grown sake rice and spring water. The approach emphasizes the relationship between rice paddies, water and the local community to produce sakes that express the territory.
