Production of aromatized wines and aperitifs based on historic recipes: infusion and maceration of herbs, barks and spices in a wine or in an alcoholic base, followed by blending and sweetening when required. For some references (e.g. Extra Dry) the choice of the wine base is declared (e.g. Cortese grape).

Producer history Cocchi (Giulio Cocchi)

Giulio Cocchi, a pastry chef from Florence, started the business in Asti in 1891, focusing on aromatized wines such as Barolo Chinato, Aperitivo Americano and several vermouths. In the early decades of the 20th century he opened a network of authorized retail outlets (the 'Bar Cocchi') and production expanded abroad. Since 1978 the company has been managed by the Bava family; it has preserved the founder's historic recipes and contributed to the revival of high-end Vermouth di Torino.

Production philosophy

To enhance Piedmontese tradition through the founder's historic recipes, artisanal production and the use of local raw materials whenever possible. The company promotes aromatized wines both for tasting and for mixing, with particular attention to territorial identity.
