Distillation and production

Production method

Single malt production with batch fermentation and distillation; the spirit is condensed using worm tub condensers, a traditional system that reduces contact with copper and contributes to a fuller, meatier new make. Expressions are generally matured in ex-Bourbon and ex-Sherry casks, with some finishes in Bas-Armagnac casks or prime-fill barrels.

Ageing

Producer history Craigellachie

Built in the late 19th century in the eponymous village in Speyside, Craigellachie began production in 1891. Over the 20th century ownership passed through several hands; since 1998 it has been part of the portfolio managed by John Dewar & Sons, a company controlled by Bacardi Limited. Only from the 2010s did the brand expand its range of official bottlings.

Production philosophy

Preserve traditional techniques that accentuate the character of historic distillation: robust, aromatic results deriving from traditional production choices rather than a modern 'clean' new make. Expressions are bottled without chill filtration and without artificial coloring.
