Distillation and production

Distillation and production

Production method

Based on the Metodo Da Ponte: use of fresh pomace collected and processed immediately after pressing, double distillation in alembic stills/patented stills and fractionation via columns, use of modern techniques (including vacuum) to purify and preserve aromas; cuts are made by sensory evaluation supported by analytical controls.

Distillation

Double distillation according to the Metodo Da Ponte in alembic stills and patented fractionating columns; use of modern techniques (including vacuum) for fractionation and purification, with cuts carried out primarily by sensory analysis supported by instrumental controls.

Ageing

Selection of batches suitable for aging and maturation in oak casks and barriques (including Limousin oak); maturation periods vary (from a few years up to over 10 years) with special selections featuring prolonged aging.

Producer history Da Ponte

Founded in 1892 in Conegliano by the Da Ponte family, the company consolidated its reputation over the 20th century: in 1896 Matteo Da Ponte published a distillation manual that codified the so-called Metodo Da Ponte; in the 1960s the distillery introduced the first single-varietal grappa from Prosecco pomace and, in 1979, moved production to the current facility in Corbanese di Tarzo. The company's history alternates family tradition, technical innovation and environmental attention.

Production philosophy

An approach that combines tradition and research: preserving the grape variety's aromatic characteristics through careful selection of pomace and attentive distillation, enhancing the Conegliano-Valdobbiadene territory and reducing environmental impact through sustainable technologies.

Territory

Conegliano-Valdobbiadene (Treviso), Veneto; predominant use of pomace from DOCG Prosecco areas for single-varietal grappas; production facility in Corbanese di Tarzo (TV).

Awards and recognitions

Among the recognitions: Merano WineHunter Award medals (gold in various editions), medals and mentions at the International Wine & Spirit Competition (IWSC) and the Premio Alambicco d’Oro for some labels (e.g. Unica Da Ponte received awards in multiple years, including Falstaff Spirits Special 2023).
