This grappa is obtained from the distillation of selected Prosecco grape marc, sourced from the renowned Venetian hills. The uniqueness of this grappa lies in its aging process: after distillation, the grappa is matured in oak barrels for eight years, a method that enriches the final product with a complex and sophisticated character.

In the glass, it presents a light amber color, a result of the long aging period. On the nose, vibrant notes of ripe fruit, vanilla, and chocolate are distinguished, thanks to the interaction with the wood of the barrel. On the palate, Grappa Da Ponte Prosecco is soft and enveloping, with a perfect balance between the freshness of the grapes and the aromatic complexity imparted by the wood.

Da Ponte (Andrea Da Ponte) is a historic Venetian distillery, founded in 1892 and based in Corbanese di Tarzo (TV). It specializes in the production of grappa (including single-varietal Prosecco grappas), liqueurs and other distillates, using a proprietary production approach known as Metodo Da Ponte and committing to low-impact production technologies.

Distillation

Double distillation according to the Metodo Da Ponte in alembic stills and patented fractionating columns; use of modern techniques (including vacuum) for fractionation and purification, with cuts carried out primarily by sensory analysis supported by instrumental controls.
