Distillation and production

Production method

Long fermentations (approximately 8–15 days) in wooden vats with natural yeasts; use of typical ingredients such as molasses, cane vinegar and recycled components from previous fermentations (dunder/muck) depending on the 'mark'; batch distillation in pot stills (double-retort and other historic pot stills) with distillate leaving at around ~82% ABV; tropical maturation on the estate's facilities.

Distillation

Discontinuous (batch) distillation (pot still / double-retort and historic pot stills), entirely in copper; artisanal process with an indicative distillation time of about 7 hours and a high-strength distillate output.

Ageing

Tropical ageing on the company's site, with the evaporation losses typical of Jamaican warehouses and maturation in ex-bourbon and other types of casks depending on the expression.

Producer history Hampden

Hampden began as a sugar estate in the 18th century and for much of its history produced rum sold wholesale as a component for blends and the industry. In the modern era ownership passed through different families; since 2009 the Hussey family has invested in on-site maturation and the commercial release of branded expressions. Collaborations with international operators (including La Maison & Velier) brought Hampden to global attention and the publication of ranges such as HLCF, 8 YO, 1753 and the Distillery Editions (Great House, Pagos, etc.).

Production philosophy

To highlight the traditional style of Jamaican rum: use of spring water, fermentations with indigenous yeasts, historical recipes (the “marks”), exclusive pot still distillation and tropical maturation without added sugars or colorants, to offer authentic and recognisable rums.
