The distillation process takes place in copper stills, the so-called pot still, which gives the product body and depth, preserving the raw aromas of the cane. The aging is done in American oak barrels that gently age the distillate, imparting notes of toasted wood, tobacco, and sweet spices.

Distillation
Distillation in pot stills (repasse stills with retort/double retort), long natural fermentations with reuse of dunder/muck to create high-ester profiles.
Ageing
On-site aging in a tropical climate; ex-bourbon barrels are used for core expressions and many releases, while ex-sherry barrel maturations/finishes are employed for specific releases (e.g. Pagos). Single cask releases and distillery editions are also practised.
