Distillation and production

Production method

Estate-grown sugarcane milled within 24 hours of harvest; fermentation evolving with wild/local yeasts (with periodic renewal of the 'pé de cuba'); distillation in a three-body copper discontinuous still (alambique triplo, known as "Alambique Alegria"), with early cuts and a procedure that reinjects fractions to obtain a clean heart. Some expressions are bottled immediately after distillation, others undergo aging in selected woods and in a solera system.

Distillation

Three-body copper discontinuous still (alambique triplo); artisanal distillation with early cuts and reinjection in the final phases to obtain the heart; spontaneous fermentation/local yeasts.

Ageing

Aging in large Ipê wooden casks for some expressions; solera reserve system (in use since 2002) for reserves; single cask expressions in oak barrels (including American and European oak) for limited releases.
