Production method

For the Nocino Terre di Romagna the estate uses immature walnuts (Chandler variety) harvested according to tradition (including on St. John's night). The walnuts are cut and infused in alcohol for about a year; at the end of maceration the solids are separated, sugar is added and spices such as cloves, cinnamon and coriander are blended in. After a subsequent decantation the product is filtered, bottled and aged in bottle for at least 12 months before commercialization.
