Distillation and production

Production method

Production follows the so‑called "Five Rare Crafts": on‑site barley growing for part of the supply, traditional malting floor, on‑site coppersmith and cooper, and supervision by the Malt Master. The spirit is normally double‑distilled and matured in oak casks with frequent use of finishes in casks that previously held sherry, rum, port or bourbon, depending on the expression.

Distillation

Double distillation in copper pot stills; the shape and configuration of the stills contribute to the character of the spirit.

Ageing

Aging in oak casks; widespread use of wood finishing (transfer into casks that have held sherry, rum, port or into virgin American oak to achieve different aromatic profiles).
