Production method
According to technical sheets and specialized sources, Tío Pesca expressions are produced following ancestral methods: cooking in stone-lined earthen ovens, manual crushing (mallettatura), spontaneous fermentation in wooden vats/jars (e.g. sabina) and double distillation in terracotta ollas (clay pots).

The Tío Pesca project originated from Santa Sabia's brand positioning efforts and the desire of the 'Pescador de Sueños' to invest in ancestral palenques. The official site recounts the discovery of a palenque in Sola de Vega in 2004 and the decision to bring those traditional expressions to the international market, giving rise to a range that includes at least Coyote, Mexicano, Tobalá and Arroqueño.
Production philosophy
To enhance and preserve the ancestral techniques and the heritage of the Sola de Vega palenques, working with mature or wild agaves and collaborating with local mezcaleros to maintain traditional production methods and the sustainability of agave populations.
