Distillation and production

Production method

Blending and aromatization of base wines by maceration and infusion of herbs and spices; small-batch production with careful sensory control of the blend; some products undergo ageing in stainless steel or in small barrels depending on the recipe.

Ageing

Ageing in stainless steel tanks for some products; for others there are references to short ageing periods in small barrels (method varies depending on the label).

Producer history Vergano

Production stems from the personal experience of Mauro Vergano, a chemist and enologist, who from the 1970s experimented with vermouth and chinato recipes for friends and family. The first bottles sold commercially date to the early 2000s; several sources indicate 2003 as the year when production was brought to wider distribution. In the following years the activity has remained a niche, family-run production with involvement of the new generations.

Production philosophy

Artisanal, small-scale production based on the use of selected base wines (often sourced from local or natural winemakers), carefully chosen botanicals and maceration/infusion techniques to emphasize the balance between sweetness and bitterness typical of the Piedmontese tradition.

Territory

Piedmont (Asti, with operational references also to Turin in descriptions of some distributors/articles).
