Distillation
Batch (discontinuous) copper still distillation at low temperature; botanical infusions followed by distillation for the gins; selection of the 'heart' fraction and, for the whisky, double distillation/use of a copper still.
Ageing
Aging in century-old Sardinian chestnut casks (previously used for Vernaccia di Oristano) for some grappas, aged gins and distillates; finishing in small barrels for selected products.
