On the palate the sip is enveloping: soft, seductive, with a structure that supports aromas of fruit jam, sweet spices and a slight toasted note. The finish is long and persistent, with balsamic echoes that invite contemplation. It is best enjoyed neat in small glasses at room temperature, ideal as a collector’s bottle or an elegant gift; it pairs well with dark chocolate, very aged cheeses or simply as a contemplative digestif.

Ageing
Ageing in Gascon oak barrels (about 400 L); after 40–50 years the best vintages may be transferred to glass demijohns to preserve their character; numbered single cask and limited editions exist.
