This wine is known for its extraordinary complexity and elegance, the result of the careful selection of Nebbiolo grapes handpicked with rigor.

Barbaresco Pajorè is distinguished by its intense ruby red color with garnet nuances that intensify as it ages. On the nose, it opens with a deep bouquet of aromas ranging from floral notes of violet and rose to more complex ones like spices, leather, and tobacco, enriched by a slight touch of vanilla and chocolate due to the aging period in barriques.

On the palate, the wine offers a solid yet harmonious structure, characterized by fine tannins and a persistent freshness. The balance between acidity and tannins is impeccable, with a long and savory finish that invites the next sip. Its elegance makes it ideal to accompany structured dishes like roasted red meats, game, and aged cheeses.

The winemaking process follows traditional methods, with a long fermentation in stainless steel vats and subsequent aging in oak barrels for at least 12 months, followed by a resting period in the bottle that further refines its character.

Family-run estate that has preserved the local agricultural tradition: its primary activity is apple cultivation, and a space for winemaking and bottling has been created within the old family house. In recent years the cultivation of Groppello has been reintroduced, together with other grape varieties typical of the area.
