On the palate it confirms a well-defined structure, tannins that are present but not aggressive, and acidity that maintains freshness and drive. The persistence is good, with a slightly savory finish and fruity, slightly almond-tinged aftertastes. It pairs with structured meat dishes, braises and roasts, cured meats and aged cheeses; it is advisable to open the bottle in advance or decant it briefly before serving at around 16–18 °C. Marchesi di Barolo signs this Cannubi with balance and character, suitable for relatively early consumption as well as short-term cellaring.
