The three variants include grappas made from different grape pomaces, each carefully selected and distilled following traditional methods that reflect the Poli family's commitment to excellence. Each grappa has been aged in different types of barrels, giving each a unique characteristic both in flavor and aroma.
1. Grappa di Cabernet: Distilled from Cabernet grape pomace, this grappa expresses vigorous notes of wild berries and spices, softened by aging which integrates elegant nuances of vanilla and cocoa, thanks to resting in oak barrels.
2. Grappa di Merlot: Coming from the pomace of Merlot grapes, this selection is distinguished by its smoothness and deep aromatic notes of plum and cherry, enriched by a light touch of black pepper, all underscored by a persistent and harmonious finish.
3. Grappa di Chardonnay: This grappa is distilled from Chardonnay grape pomace, offering a surprisingly fruity bouquet with accents of green apple and peach, which blend into a slightly toasted and creamy finish, the result of its time spent in special barrels.

Distillation
Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.
Ageing
Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.
