Bianco DOC - Pharis - Le Casematte is a distinctive white wine produced by the Le Casematte winery, located in the picturesque region of Sicily, Italy. This young winery, founded in 2008 by Fabio Signorini and subsequently also involving the famous footballer Gianluca Vialli, quickly established itself for the quality of its wines, which express the rich terroir of the island with authenticity and passion.

The "Pharis" is classified as DOC, a denomination that guarantees the origin and conformity to the specific production practices of the area, highlighting the commitment of the Le Casematte winery in respecting and enhancing local wine traditions. This white wine is the result of a careful blend of native and international vines, which vary depending on the vintage, chosen to create a perfect balance between character and freshness, typical of Sicilian whites.

At sight, Bianco DOC Pharis has a light straw yellow color, with brilliant reflections that anticipate the liveliness of the wine. On the nose, the wine offers an intense and varied aromatic range, with notes of white pulp fruit, citrus and white flowers, enriched by mineral nuances and a light trace of aromatic herbs, which reflect the complexity of the blend and the influence of the terroir Sicilian.

In the mouth, the wine is fresh and harmonious, with a well-balanced acidity that supports its structure and enhances the fruity and floral flavours, leading to a persistent and pleasantly savory finish. Its versatility makes it suitable for a wide spectrum of gastronomic combinations, from light appetizers to fish dishes, seafood and fresh cheeses.

Winery history
Le Casematte began as an enological project founded by Gianfranco Sabbatino and Andrea Barzagli with the aim of raising the profile of the Faro appellation. The name comes from the presence, within the vineyards, of two casematte visible in the landscape; the venture is presented as a meeting between local tradition and modern winemaking choices.
Production philosophy
Small-scale, terroir-focused production: the producer favors indigenous grape varieties and low‑impact farming practices, limiting the use of new oak in aging to preserve freshness and a sense of place in the wines.
Terroir and vineyards
Vineyards on the hills of Contrada Corso, on the heights north of Messina overlooking the Strait of Messina, at an altitude of around 500 metres above sea level. The microclimate is influenced by sea breezes between the Ionian and Tyrrhenian seas, with pronounced day–night temperature variations that promote the aromatic development of the grapes.
