The Bin 707 Cabernet Sauvignon 2021 from Penfolds presents itself as a red wine of strong personality. Deep ruby colour with violet highlights; the aromatic profile offers notes of ripe dark fruit, blackcurrant and black cherry, accompanied by spicy nuances, graphite and light tobacco hints. On the palate it shows concentration and structure: full-bodied, clear firm tannins and balanced acidity that supports the fruity impressions, delivering a compact and precise feel. In the long finish, returns of dark fruit and a slightly saline note provide persistence.

It pairs well with red meats, game and mature cheeses; it can be tasted after a short decanting to open the aromas. Serving temperature around 16–18 °C. For those wishing to cellar it, a cool, stable cellar is advisable; this is an expression of Cabernet Sauvignon that favours structure and depth without specific technical claims.

Winery history
Penfolds was founded in Magill when Christopher and Mary Penfold planted the first vines in 1844. Today Penfolds combines tradition and innovation, continuing to nurture historic vineyards and select fruit from many regions for its flagship wines.
