Poli Brandy is obtained through a meticulous distillation process that follows ancient techniques handed down from generation to generation. The distillation occurs in traditional copper stills, which impart to this spirit exceptional purity and aromatic complexity. Subsequently, the distillate matures in small oak barrels, where it acquires amber hues and a rich and enveloping aromatic bouquet.

Distillation
Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.
Ageing
Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.
