The Castel di Serranova IGP by Vallone is a red wine that originates from the picturesque region of Puglia, in the area of Salento, known for its fertile land and ideal climate for viticulture. Produced exclusively with Negroamaro grapes, an indigenous variety that embodies the soul of Apulian winemaking, this wine encapsulates the essence of the territory.

Once harvested, the grapes undergo controlled fermentation, followed by a period of maturation in oak barrels, which gives the wine a solid structure and complex aromatic nuances. The color of the Castel di Serranova is deeply red, with violet reflections that testify to its youth and vitality.

On the nose, the wine presents a rich and intensely fruity bouquet; notes of ripe red fruits, cherry, and plum emerge, enriched by slight hints of spices and vanilla, a result of its aging in wood. On the palate, the Castel di Serranova confirms its rich and robust personality: the entry is powerful, with a good match between olfactory sensations and taste. The tannins are well present yet soft, perfectly integrated with the acidity that brings freshness to the palate.

Perfect for pairing with red meat dishes, game, and aged cheeses, the Castel di Serranova IGP by Vallone offers an authentic taste experience deeply connected to the traditions of its territory. Also ideal as a meditation wine, it is recommended to serve it at around 18°C to fully appreciate its qualities.

Winery history
The winery's history is tied to the historic vineyards of Salento: the union of the Vallone and De Marco holdings and the subsequent acquisition of the Castel Serranova estate shaped the current production project. Over the years the winery has experimented with techniques such as grape drying, which led to the creation of the celebrated Graticciaia.
Production philosophy
Focused on promoting Salento's native grape varieties, the estate aims to accurately express the characteristics of its vineyards and varieties, maintaining a family-run, artisanal approach while remaining open to winemaking innovation.
Terroir and vineyards
Production takes place across three estates in the heart of Salento, with vineyards planted on a variety of soils, combining areas close to the Torre Guaceto nature reserve and historic plots such as Caragnuli, from which the grapes for Graticciaia are sourced.
