On the palate it is slim but characterful, with a pleasant sapidity that draws the palate toward a persistent, slightly toasted finish. It is a Champagne well suited as an aperitif and that stands up well to seafood dishes: oysters, shellfish and sushi enhance its fresh salinity, while a tartare or fresh cheeses appreciate its tension. Serve chilled, without seeking excessive roundness, to capture its elegant cleanliness.
