Cuvée 100% Pinot Meunier. Brut Nature / pas dosé Vineyard/parcel: Oeuilly — clay and silty chalk soils. Viticulture certified organic and biodynamic. Vinified with indigenous yeasts, matured for 11–12 months in neutral oak and aged under cork for 30–36 months.
Winery history
The "Campanien" bottling is a cuvée from Legrand‑Latour, a family estate based in Fleury‑la‑Rivière led by Thibault Legrand. In recent years the estate has shifted production toward organic practices and adopted a geo‑oenological approach to the vineyards, highlighting distinct parcels and geological layers. This approach is also connected to the family's paleontological work and to the "Cave aux Coquillages" used for bottle ageing.
Production philosophy
Seeking the expression of the soil through low-intervention winemaking: certified organic and biodynamic farming, the use of indigenous yeasts, fermentations and extended ageing to bring out the minerality and distinctiveness of the various geological strata.
Terroir and vineyards
Grand Vallée de la Marne, a parcel in Oeuilly on clay and silty chalk soils. The subsoil is rich in calcareous deposits and fossils, which the producer interprets geo-oenologically.
