Champagne Extra Brut BIO AOC - Clarevallis - Drappier is a prestigious selection that invites you to discover a pure and intensely lively expression of the Urville territory, located in the Champagne region. Produced by the iconic Drappier cellar, famed for its strict approach to quality and the adoption of biodynamic practices, this Champagne exhibits a distinctive character that reflects the cellar's philosophy of respect for nature and the environment.

The "Clarevallis" cuvée is a tribute to the Clairvaux Abbey, founded by St. Bernard in 1115, not far from the Drappier family's vineyards. Reflecting the historical and cultural richness of the region, this champagne stands out for its Extra Brut style, with a very low dosage that enhances the purity and finesse of the fruit.

Visually, Clarevallis boasts a bright golden yellow color with a very fine perlage, indicative of meticulously cared-for maturation in Drappier's ancient cellars. On the nose, it releases delicate aromas of fresh citrus, white flowers, and mineral notes, followed by hints of green apple and brioche bread due to the long fermentation with indigenous yeasts.

On the palate, the mouth is greeted by a sharp liveliness of lemon and lime, masterfully balanced by a seductive creaminess and a complex range of flavors that include white pulp fruit, almond, and a hint of fresh ginger. The finish is remarkable, leaving a clean and refreshing impression, with a slightly salty aftertaste that invites another sip.
