Pairing Aperitifs, fish, shellfish, refined dishes
This cuvée, aged in fût de chêne, offers a warmer, rounder character than classic champagnes. On the nose there are notes of bread crust, soft butter and a subtle trace of vanilla that blends with scents of baked apple and toasted almond; the use of wood is measured, it does not erase the freshness but wraps it, adding depth, a silky sensation and a light minerality in the background. The perlage remains fine, supporting the structure without weighing it down.

On the palate the wine is full and focused: lively acidity and sapidity balance the softness, yielding pleasant persistence and a slightly spicy finish. It suits an elegant aperitif but also stands up to more complex dishes like buttered shellfish, flavorful white meats or soft cheeses; serving it in large glasses and at a cool temperature helps to capture its nuances. Ideal for convivial moments or to accompany a tasting menu, it offers a good balance between intensity and drinkability.
