Headquarters and vineyards are in Chézy-sur-Marne, in the western part of the Vallée de la Marne. Produced in very limited quantities; each cuvée is conceived as a unique expression of the vintage. Low-intervention approach: indigenous yeasts, little or no SO2, and very low dosages. Occasional use of wooden barrels for some winemaking and aging. Significant training and professional experience that have influenced the project.
Winery history
Tom Gauditiabois returned to work at the family estate in Chézy-sur-Marne and began releasing his own cuvées starting with the 2016 vintage. His training includes studies in Avize and periods working at established maisons that have influenced his approach. The releases are numbered and produced in very limited quantities, with each cuvée tailored to the character of the individual vintage.
Production philosophy
Terroir-focused, minimal-intervention approach: winemaking with indigenous yeasts, limited use of sulphites, and experimentation with short ageing in wood to express the substance and specific character of the grapes and vineyards.
