On the palate it reveals a balance between structure and agility: salinity and a fresh acidity support a long, lively framework, leaving a persistent finish of citrus, yeast and a faint hint of bitter almond. The progression is refined, with aromatic returns that linger without weighing down. It works both as a characterful aperitif and for refined culinary pairings — seafood served simply, shellfish, baked fish or delicate cream-based dishes; it also pairs well with fresh cheeses. Serve well chilled, around 8–10 °C, to appreciate its precision and depth.
