Elegant and vibrant, this Champagne from Thomas Perseval opens with a fine, persistent perlage that accompanies aromas of apple and ripe pear, citrus peel and a delicate hint of warm bread. The character is lean yet enveloping: lively acidity and good tension contribute to a fresh drinkability, while a subtle underlying creaminess balances the sip without weighing it down. There is also a faint savoriness and a mineral note that extend the persistence, giving the wine a pleasant sense of cleanliness and precision.

On the palate there is a measured balance between structure and lightness, with fruity echoes and a dry, flavorful finish. Versatile with food, it pairs well with seafood starters, steamed fish, shellfish and dishes based on fresh ingredients; it works equally well as an aperitif Champagne. Serve at around 8–10 °C in a tulip glass to appreciate its finesse and aromatic clarity.
