Produced with a careful selection of grapes from the Mid-Slopes (Mi-Côtes) of the Champagne region, this extra brut offers an unparalleled tasting experience thanks to its meticulous approach and long aging in the cellars of Maison Maurice Choppin.

The production process follows the traditional Champenoise method, which gives this champagne characteristics of freshness and complexity. The grapes are handpicked to ensure maximum quality and then gently pressed. The second fermentation takes place in the bottle, where the champagne rests on its lees for at least 36 months before disgorgement, allowing the development of deep aromas and textures.

On the nose, Les Mi-Cotes Extra Brut reveals vibrant notes of fresh fruit such as green apple and citrus, with accents of white flowers and slight touches of bread crust, given by the sur lie evolution.
