This Blanc de Blancs Premier Cru by Louis Brochet for Folonari offers a clean, refined profile built on the purity of Chardonnay. On the nose it opens with fresh citrus — lemon and grapefruit — accompanied by white flowers and a light hint of green apple; the bubbles are fine and lively, supporting a fresh, mineral texture. There are also subtle biscuity notes that lengthen the finish without weighing it down; controlled acidity keeps the wine lean.

On the palate the sip is savory and dynamic: the mousse creates a slight creaminess that balances the brisk acidity and leads to a pleasant, saline persistence. Suitable both as an aperitif and paired with raw seafood, oysters, shellfish and delicate fish dishes; it also stands up well to fresh cheeses and creamy risottos and can support white meats with light sauces. Serve chilled, around 8–10 °C, to best appreciate the tension and aromatic cleanliness that characterize this Premier Cru Champagne.

Winemaking family with documented activity dating back to the 18th–19th centuries. A group of estates led by Ambrogio and Giovanni Folonari, with five Tuscan estates and a diversified portfolio. Approximately 250 hectares of vineyards across the company’s estates. Declared production of approximately 1.2 million bottles. A wine portfolio featuring typical labels from the Veneto and Tuscany.
Winery history
The Folonari family has deep roots in the Brescia area and has been involved in wine production since the late 18th century. At the end of the 19th century the headquarters were moved to Brescia, and in the early 20th century the family acquired the historic Ruffino winery. In the 1960s Nino Folonari began a shift toward quality with the acquisition of estates in Chianti. In 2000 Ambrogio and Giovanni Folonari established Ambrogio e Giovanni Folonari Tenute, which brings together several estates in Tuscany, while the Folonari brand offers an extensive range of table wines and appellation wines.
Production philosophy
